400 Mini Cupcakes

A couple of weeks ago, I was hired by a good friend to make 400 mini cupcakes for a reception at our church. I thought, um yes, that's awesome! Then i realized something, I had four other cake jobs that weekend AND that the cupcakes had to be made the evening before to be super fresh and good. Now the baking went well and took only around four hours...this is me, two mixers, and four mini cupcake pans. I decided to hold off on frosting them late into the night and decided to frost them the next day after church. That gave me three hours to frost and decorate. That planned was feasible until it snowed. Yep, lovely, pretty snow made the event move up an hour. I had two hours. Me vs. 400 minis in two hours. Then I got smart, well let's just say I've got really, really nice friends. After church, instead of driving home before the weather got really bad, they came over to my house and helped me complete the order. 
Mandy frosted, I made the frosting, and Lindsay accessorized the cupcakes. Believe it or not we were done in an hour and boxed them all up quickly after. 
The ladies at the reception LOVED them. They couldn't get over how pretty they were and delicious! The top favorites: lemon, banana, and the Reese's pb cup!

I couldn't stop taking photos of them. Mostly because I couldn't believe they were actually done and beautiful!
Much thanks to Mandy and Lindsay for all their help! I'm sure I'll need them again someday!
